Seafood canapes

My husband and I had an amazing meal when we stayed at Middle Beach Lodge in Tofino, British Columbia, and these appetizers have been a hit everytime I have made them myself for get-togethers.

The canape base is sliced cucumber.

Top with:

  • cream cheese (you can buy organic cream cheese made with quality ingredients; next time I plan to try these with goat cheese)
  • a piece of smoked salmon or shrimp
  • a small slice of red onion
  • one caper
  • dill, fresh if possible
